So the beginning of this week was pretty crazy. My wonderful husband had surgery in columbus (which thankfully went very well), so we spent the first part of the week in the hospital. I was definitely ready to have a relaxing normal dinner at home on wednesday. Nathan and I purchased some dried split peas at a local bulk foods store and I found a yummy looking recipe on 101 Cookbooks (a blog I've been visiting quite often lately) for split pea soup. Nathan and I also had two alaskan pollock fillets left in the freezer so I decided to use those to make a cornmeal crusted fried fish. I was feeling fairly adventurous so instead of using normal crackers for the soup I found a recipe for sharp cheddar walnut crackers. The recipes for all these dishes were very simple and lots of fun! The soup had a sweet taste to it thanks to the many caramelized onions, which we both really enjoyed. The crackers were very yummy and nathan really like the fish (although I think I fried it a little too long) =) All in all it was a very fun and tasty meal!
Well its been quite a few weeks of discount grocery trips, Hogan's Heroes reruns, swiss chocolate indulgences, rotting tomato transformations, folk music concerts, and thrift store shopping adventures since I've even visited this blog. Not to mention a wedding, a honeymoon, a surgery scheduled, and the start of autumn semester. =) I have been very blessed with a busy and wonderful first month and a half of my new life as a wife! There have been plenty of fun times in the kitchen already, from baking bread, to freezing corn, to canning beets! Not to mention mac and cheese burgers, homemade pizza, lentil patties, miso soup, butternut squash bread, baked fish with tomatoes and zucchinis, and stuffed eggplant! Nathan and I have really been enjoying our nice kitchen and although I don't have any recipes to post right now, I'd thought I should reenter the blogging world with some pictures =).
